How To Make Beef Satay

Beef satay is a delicious Indonesian dish. Satay describes any meat being skewered, grilled and served with a distinct and fragrant sauce. Beef satay is marinated and pairs very well with a spicy peanut sauce. Serve it with a cucumber salad to cool off the spice a bit if you’d like. This recipe serves 6 and the prep and cook time is about an hour and a half. The beef needs to be marinated for an additional 2 hours or so before cooking. Ingredients – Marinade and Beef

  • 1.5 pounds of trimmed skirt or flank steak
  • 2 tablespoons of lime juice
  • 1 tablespoon of finely chopped, fresh lemongrass
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fish sauce
  • 2 teaspoons of minced garlic
  • 1 teaspoon of minced, fresh ginger
  • 1 teaspoon of brown sugar
  • 1 teaspoon of turmeric
  • 1/2 teaspoon each: coriander, cumin, black pepper

 

Ingredients – Sauce

  • 1/2 cup of finely chopped onion
  • 2 teaspoons of peanut oil
  • 2 teaspoons of fresh, minced garlic
  • 1 teaspoon of fresh, minced ginger
  • 1 teaspoon of finely chopped, fresh lemongrass
  • 1/2 cup of coconut milk
  • 1/4 cup of unsalted peanut butter
  • 1 tablespoon each: fish sauce, ketchup, lime juice
  • brown sugar to taste
  • Asian chili sauce to taste

 

Marinate The Beef

Begin by combining all of the marinade ingredients in a small bowl. Cut the steak across the grain into 1 to 2-inch strips. Put the beef strips into a sealable plastic bag then add the marinade. Ensure that the marinade coats all of the meat. Refrigerate the meat for a minimum of 2 hours and up to 12 hours.

 

Prepare Dipping Sauce

Combine the oil and onion in a small saucepan. Cook the onion by covering it on medium-low for about 5 minutes until the onion is soft. Stir as needed. Incorporate the garlic, ginger, and lemongrass. Reduce the heat and stir frequently. Don’t allow anything to brown. After about 2 minutes add in the coconut milk, peanut butter, fish sauce, ketchup, lime juice, hot sauce and brown sugar. Cook until all of the ingredients are well-blended. Add water if you would like a thinner sauce. This sauce will keep for up to 3 days if refrigerated and covered.

 

Cooking The Satays

Preheat your grill to medium. Remove the beef strips from the marinade and discard the marinade. Skewer the strips, putting one strip on each skewer. Grill the skewers for about 2 to 3 minutes per side, turning them once. This will give you a medium cook. Cook longer for more well done and about a minute per side for rare. Serve the sauce on the side, warmed, and as a dipping sauce. Accompany with an optional cold, cucumber salad. You can also prepare this same satay dish with chicken or pork.
